The SolySal de Colima saltworks are located in the margins of the lagoon Cuyutlán, a lake whose waters are the product of ancient water runoff from the surrounding mountains. The production process has evolved without losing its essence craft. Previously, the salt was extracted by leaching the salt land. Currently, however, seawater is pumped from artesian wells, called tajos, which produce salt by evaporation. Thus, we obtain an even more pure salt than with the traditional method. The SolySal wells are the only ones who dig more than 10 meters deep, ensuring greater purity of the salt . During evaporation of brackish water, forms daily thin surface layer, which is called the salt mirror. This layer is carefully harvested by hand, and that is the Flor de Sal.
